Chicken Spring Roll Bowls

Bring a pot of water to a boil and add the chicken breast. Cover with a lid and cook for 30 minutes or until it's cooked through. Slice into strips.
Meanwhile, cook the edamame according to the package directions, and reserve the water. Cook the rice vermicelli noodles in the edamame water according to the package directions.
Divide the lettuce, cucumber, red pepper, noodles, edamame, chicken, basil, and mint evenly between bowls. Add the peanut sauce, and enjoy!
